The cherry is the fruit of many plants of the genus Prunus, and is a fleshy drupe (stone fruit). The fruit is usually spherical, but it could also be heart-shaped or an elongated sphere. The colour is normally red, but it could change depending on the variety from the yellow of the Piedmontese ‘White Graffione’ to the dark red nearly black of the ‘Black Durone of Vignola’. Depending on the variety, also the colour of pulp and the consistence could change from white to dark red and from soft to crisp. The flavour is sweet, never nauseating, and slightly acid.
